portion for one (or about 2 scoops)
1 ripe banana
half vanilla pod seeds
1 dessertspoon apricot fruit spread (no added sugar)
40ml natural yogurt (or part strawberry childrens yogurt squeezy)
Peel and slice the banana. Wrap loosely in baking parchment and freeze for one and a half hours. Place the frozen banana into the food processor with all the other ingredients. Blend for a few moments until the mix is smooth and creamy. Transfer to a freezer proof container and freeze for a minimum of 2 hours. When you're ready to eat remove container from the freezer and leave at room temperature until it softens slightly or serve immediately on a warm pud. ps lovely with banana bread. Enjoy.
